Bruschetta
Tasty and colorful finger food. Perfect as an appetizer or along side your antipasto.

Ingredients
1 lb plum tomatoes diced
1 tsp salt
½ tsp pepper
1/3 cup fresh basil chopped
4 large cloves garlic minced
1 loaf Italian bread
1 whole clove of garlic for rubbing
1/2 cup extra virgin olive oil
1 tbsp balsamic vinegar
Directions
Preheat oven 500 F
1. In a bowl combine the tomatoes, basil, garlic, olive oil, balsamic vinegar, salt, and pepper. Mix well and let rest for 30 minutes
2. Cut the loaf of Italian bread, arrange on baking pan and place in oven for 10-15 minutes. Remove when lightly toasted
3. Rub the bread with the whole garlic clove. Drizzle olive oil over the bread and top with the tomato mixture.
Garnish with fresh basil.
