Grilled Octopus Salad
You can boil the octopus to tenderize it before grilling. This is a great summer dish! Full of color and flavor. You can add a multitude of cooked or raw vegetables to change it up like fresh string beans or zucchini or squash. Serve it as a starter, a side dish or main dish. Compliment with a glass of wine.

Ingredients
1lb octopus
Grill octopus and cut into bite size pieces
1/4 cup chopped fresh parsley
1 - 8 oz jar drained pitted Kalamata olives
1cup diced tomato
1 - 14 oz jar or can artichoke hearts unseasoned
1/4 cup chopped basil
4 garlic cloves chopped
1/2 cup extra virgin Olive oil
1/4 cup white wine
Salt and black pepper to taste
Directions
Combine all the ingredients in a bowl
2. Stir and add salt and pepper to taste.
3. Let marinate about 1hour before serving.
