Hearty Beef Stew
This is and was a dinner staple in our house. This is a great one pot, meat and potato dish. This dish can be made 1 to 2 days in advance, the longer it sits the better it flavors.

Ingredients
3 lbs cubed beef
1 large onion - chopped
1 head celery - chopped
1 bunch carrots- chopped
3 sweet potatoes chopped
3 white potatoes cut
2 -15oz cans peas
1 - 8oz can huts tomato sauce
Extra virgin olive oil to cover bottom of the pan
3/4 cup red wine
2 beef bouillon cubes
Salt and black pepper to taste
Directions
1 In a large stock pot cover the bottom with olive oil, salt, black pepper and then add in onions and meat. Let brown.
2 Add the chopped vegetables, white potatoes. Let soften about 15 minutes.
3 Add the peas, red wine, bouillon cubes, hunts tomato sauce. Stir add more salt and pepper to taste.
4 Cover and let simmer for about 1hour.
