Kale and Bean Soup

Hearty, flavorful soup perfect for winter time. Enjoy at lunch or dinner.

Kale and Bean Soup Recipe

Ingredients

1 cup chopped celery
1 cup chopped onion
1 cup chopped carrots
5 sweet Italian sausage- cut into bite size pieces
1 - 14.5 oz can diced tomatoes
1 cup chopped white potatoes
1 - 10oz bag baby kale
1 -29 oz can white cannellini beans
1/2 cup grated Parmesan cheese
2-32 oz containers of chicken broth
1/2 cup white wine
2 chicken bouillon cubes
Salt to taste
1 tsp black pepper
1/2 tsp red pepper flakes
1/2 tsp rosemary

Directions

1. Cover the bottom of a stock pot with extra virgin olive oil, salt, pepper and red pepper flakes. Add the bite size sausage pieces and let cook.
2. Add the onion, celery, carrots and potatoes and let soften. Mix occasionally.
3. When the vegetables are soft, add the chicken broth, Parmesan cheese, diced tomatoes, wine, bouillon cubes, kale, cannellini beans with the liquid and rosemary.
4. Taste and add more salt if needed.
5. Stir and let simmer about 1 hour.

Serve with grated cheese on top.
