Potato and Eggs
Potatoes and eggs are a classic combination often enjoyed for breakfast or lunch. This was a family favorite that grandma served on Italian bread for lunch on Saturdays. This dish is quick and easy to make and serves up well with a side salad.

Ingredients
1 dozen eggs
3 large potatoes, peeled and chopped
1 large onion chopped
Salt
Black pepper
1/2 cup grated cheese
Extra virgin olive oil
Directions
In a large skillet, cover the bottom with olive oil. Add the chopped onion and potatoes. Sprinkle with salt and pepper. Cover and cook over medium heat till translucent in appearance.
In a separate bowl, whisk the eggs and grated cheese.
Pour egg mixture over the translucent onion and potatoes. Let the eggs cook several minutes before scrambling with a fork. Add salt and pepper to taste.
Serve on hot Italian bread
